strawberry crunch cake {recipe}




Yum! This is a great fruity spring treat!


: :  Ingredients  : :

 - a box of crunchy granola bars 
 - 6 tbsp of melted butter
 - 1/3 cup of brown sugar
 - 1/2 cup of flour
 - 2 egg whites
 - 1/2 cup of sugar
 - 1 cup of heavy whipping cream
 - 4 oz of cream cheese
 - 1 1/2 cups of sliced strawberries. 


The ingredient list seems a little daunting, but after a better look at it, you'll notice that you probably keep a lot of these items around your kitchen already. 



Start by preheating your oven to 350 degrees. 

Toss your granola bars into a food processor until you achieve a crumb type consistency.





Add brown sugar, flour, and melted butter.






Cover an 8x8 pan with parchment paper and fill. Then bake for 20 minutes. 






In the mean time, combine egg whites, sugar and heavy cream. Mix on high for at least 5 minutes. 
Then add the cream cheese. Mix until well blended.






Add in your strawberries. 






Hopefully at this point your granola crust is nearly done in the oven. Take out crust and parchment paper. Make sure your 8x8 pan is sufficiently greased.
Divide the granola mixture in half and press  onto the base of the dish. 






Pour your strawberry/cream cheese mix on next. Then top with the remaining granola.







Cover and place the dish in the freezer for at least three hours. Some like this dish completely frozen, but I prefer it a bit softened so I recommend move it to the refrigerator an hour or so before eating. 






I also like pretending that because this dessert has fruit and granola that its super good for you! Seems legit, right??
