spinach dip {recipe}



We've had a collection of movie nights lately. With the final Harry Potter movie coming out this week {eek!} we decided to spend the last couple of nights watching the other movies in the series {which is much faster than reread the books again}.

My husband love love loves spinach artichoke dip. So I decided to be an awesome wife the other night and whip him up some homemade dip. It was deeeeeelish!!



Ingredients:

 - 10 oz package of frozen chopped spinach
 - 2  (14 oz) cans of artichoke hearts
 - 3/4 cup of mayonaise
 - 1 cup of sour cream
 - 1/4 cup of melted butter
 - 1 1/2 cups of grated Parmesan cheese
 - 1 cup grated pepper jack cheese


FYI, this recipe is kind of gross in the making. I mean, spinach ... artichoke hearts ... yuck.


Preheat the oven to 350 degrees.
Heat  your spinach in the microwave to defrost.
Chop up your artichoke hearts. I usually just cut them into manageable pieces and then let the food processor do all the real work. 



Mix spinach, artichoke hearts, sour cream, mayo, butter and parmesan cheese in a bowl. 


{appetizing, eh?}




Lightly grease a casserole dish and pour the mixture in.




Top with the pepper jack cheese.




Bake for 30 minutes.




And serve it up!!

In other news, one of my very best friends is in the hospital with appendicitis right now. I know that its a mild thing and a simple surgery, but would ya'll pray for her? She's the best and I hate to see anyone stressed and hurting. 

She's so stinking tough too. You can bet that if it were me, I'd be freaking out right. But she's calm, cool and collected. I'm trying to think on happy things to cheer her up...

"Rejoice in the Lord always; again I will say, rejoice! Let your gentle spirit be known to all men. The Lord is near. Be anxious for nothing, but in everything by prayer and supplication with thanksgiving let your requests be made known to God. And the peace of God, which surpasses all comprehension, will guard your hearts and your minds in Christ Jesus. Finally, whatever is true, whatever is honorable, whatever is right, whatever is pure, whatever is lovely, whatever is of good repute, if there is any excellence and if anything worthy of praise, dwell on these things."

Philippians 4: 5-8
