Homemade Kettlecorn

After a wonderful weekend with my dear husband, friends and family, we've settled down for snuggley evening on the couch {Golden Globes tonight!}

And I'd be completely reminisced if I didn't share this wonderfully perfect recipe with you tonight.

This isn't just any popcorn. It's the best homemade kettle corn you'll ever have. Cross my heart. And the recipe is so simple!


 - 1/3 cup popping kernels
 - 1/4 cup vegetable oil
 - 1/3 cup sugar

{all this for one nice big bowl}

Pour your oil into a skillet and turn heat to medium high. Toss in a couple of kernels to test the heat of the oil. Make sure to put on a tight lid! When those test kernels pop, toss in the rest of your kernels. Then pour the sugar in. Stir {and stir quickly, that oil gets hot fast!} and replace the lid. Shake your skillet every 10 seconds or so to keep the kernels from burning. When all the kernels have popped, take your skillet off the heat and stir again. Salt to taste!
At first, the kettle corn will be sticky and hard to mix up, but as it dries it'll break apart like normal.

And let the battle for the bowl begin!
